Waffle Potatoes with Cowboy Butter Chicken, Bacon, and Ranch

These waffle potatoes, inspired by @thechefoutwest, are topped with savory cowboy butter chicken, crispy bacon, and a creamy cowboy butter ranch. A unique and delicious take on loaded baked potatoes.
1. Cut bacon into pieces and cook on a cast iron skillet until crisp. Use a food processor to get them into small, fine pieces. Set aside.
2. Season chicken tenders with cowboy butter seasoning. Cook the chicken in about 2 Tbsp of the leftover bacon grease until done. Remove and allow to rest, then chop.
3. Make the cowboy butter: In a bowl, combine the melted butter, minced garlic, juice of 1 lemon, lemon zest, Dijon mustard, paprika, fresh chopped parsley, 2 Tbsp chives, thyme, chili oil, and 2 tsp cowboy butter seasoning.
4. Make the cowboy butter ranch: Pour half of the cowboy butter mixture into a separate jar. Add sour cream, mayo, buttermilk, and fresh dill to it. Mix well.
5. Preheat your waffle maker on high. Put down a layer of the prepared cowboy butter on the waffle maker and place the baked potatoes on top, then smash them flat with the waffle maker lid. Baste the potatoes with more cowboy butter every 5 minutes for 15 minutes. After 15 minutes, apply shredded Colby Jack cheese and let cook for 5 more minutes until melted and crispy.
6. To build: Arrange the chopped chicken, cowboy butter ranch, bacon bits, and fresh chives on top of the waffle potatoes. Enjoy!
