Bacon Cheeseburger Bites

Cook the bacon in a skillet over medium heat until crispy. If not cut small enough, chop on a cutting board and set aside. In a large bowl, combine ground beef, cooked bacon, shredded Colby Jack cheese, 3 tablespoons of burger seasoning, and 2 eggs. Form the mixture into approximately 72 meatballs and place them onto baking sheets.

For the dredge, crack 4 eggs into a bowl and whisk them. In another larger bowl, combine the panko bread crumbs, flour, and the remaining 2 tablespoons of burger seasoning. Dip each meatball into the whisked eggs, then into the panko mixture, ensuring it's completely covered. Place the dredged meatballs back onto the baking sheets.

Preheat frying oil to 350°F. Fry the meatballs until golden brown and the internal temperature of the beef is above 130°F. Garnish with parmesan, chopped parsley, and a drizzle of burger sauce before serving. Enjoy!
