SOUTHWEST BREAKFAST BURGER

For the spread, mix together 1/2 C mayo, 1/4 C ketchup, 3 Tbsp sweet relish, 1 tsp white vinegar, 1 tsp Dijon mustard, 2 tsp paprika, and a dash of salt and pepper. Light charcoal under a pot and cook the bacon until crisp. Remove the bacon, then add diced potatoes and white onion to the pot and cook until browned and soft. Add the cooked bacon back in with the potatoes and onion. Once the pot is empty, add in charcoal and insert a griddle. Glaze the griddle with olive oil and toast the brioche buns. Remove the buns and insert a grate to cook the burger patties. Place a skillet griddle on the heat and cook the eggs. Finally, build the burger with the cooked ingredients and spread.
