Instructions

-Preheat your griddle to about 350°F and keep it on the LOW setting. This will give the duck a slow and steady cook through the fat layer

-Cross cut the fat side of the duck breast and season well

-Lather the griddle plate with olive oil and butter and carefully place the duck on, fat side down

-Give the duck about 10-15 mins to cook and crisp

-While the duck cooks, cut up all the veggies and set them to the side

-Flip the duck and apply butter to the backside of the griddle. Throw down the tortillas on the butter

-Flip the duck and let side for another 5-10 mins

-Flip tortillas after 1-2 mins and brown up the other side. Remove and place on prep area

-Remove duck and allow to rest for 5 mins. Aim for an internal temp between 125°F and 135°F using the @thermopro Lightning for best results

-Cut duck into 1/4” slices, mix in with veggies, construct tacos, and finish with a lime squeeze + honey drizzle
