Grilled Cheese Chili Dog

1. Cook down the diced onion, jalapeños (if using), and minced garlic in a pan.
2. Add in the ground beef and stock, then simmer for 1 hour.
3. After 1 hour, add in the seasonings (chili powder, paprika, black pepper, ground cumin, kosher salt, Mexican oregano, ground cayenne), Worcestershire sauce, and yellow mustard. Mix well and add the bay leaf.
4. Simmer for an additional 30 minutes.
5. While the chili simmers, prepare the grilled cheeses and cook the hot dogs.
6. To assemble, place the hot dogs in the grilled cheese buns, top with the prepared chili, and garnish with jalapeños, chives, and additional cheese as desired.
