Father's Day Pancakes with Homemade Whipped Cream
20 mins prepServes 4
If you’re a bacon AND pancake lover, you’ll melt over these. However, if you don’t like mixing the two together, this pancake recipe is great on its own. This recipe also includes instructions for homemade whipped cream to serve alongside.
For the Pancakes:
1. Combine together the flour, sugar (or sweetener), baking powder, baking soda and salt in a large-sized bowl. Give a mix.
2. Combine together the milk, egg, and vanilla in a measuring cup. Pour that into the bowl along with the melted butter and mix until just put together. Leave a bit clumpy.
3. If you find the batter too thick — doesn’t pour off the ladle or out of the measuring cup or bottle smoothly — fold a couple tablespoons of extra milk into the batter at a time until reaching consistency.
4. Set the batter aside and allow to rest while heating up your pan or griddle.
5. Heat a nonstick pan or griddle over low-medium heat and wipe over with a little butter to lightly grease pan.
6. Pour ¼ cup of batter onto the pan and spread out gently into a round shape.
7. When the underside is golden and bubbles begin to appear on the surface, flip with a spatula and cook until golden. Repeat with remaining batter.
8. Serve with honey, maple syrup, bacon, fruit, ice cream or frozen yoghurt, or enjoy plain!
For the Homemade Whipped Cream:
1. In a mixer, combine 2 cups whipping cream, 1/4 cup powdered sugar, and 1 teaspoon vanilla.
2. Mix on medium speed for about 10-15 minutes or until fluffy.
