Smoky chicken thighs, bacon, grilled onions, and a bold ranch come together in these easy-to-make sliders. Perfect for a backyard cookout, weekend grilling, or feeding a hungry group.
1. Season chicken thighs with Big Bold Chicken seasoning and slide onto skewers. Cook on the grill or smoker at 300°F for about 15 minutes on one side.
2. While the chicken cooks, mix all ranch ingredients (mayo, sour cream, lemon juice, Big Bold Chicken seasoning, chives, fresh dill, buttermilk) together to create the Big Bold Ranch.
3. Start cooking the bacon.
4. Flip the chicken skewers and cook for another 15 minutes.
5. Slice the onions and cook them in about 2 tablespoons of bacon grease for roughly 10 minutes until softened and slightly caramelized.
6. Place cheese (white cheddar and pepper jack) on the cooked chicken and toasted French bread. Let it sit in the grill/smoker for about 15 minutes until the cheese is melted and bubbly.
7. Build the subs by layering chicken, grilled onions, bacon, and Big Bold Ranch. Slice the assembled subs into 8 sliders and serve.
