Combining pizza and BBQ flavors, these cheesy, flavorful Pulled Pork Roll-Ups feature tender smoked pork shoulder, mozzarella, and Kinder's barbecue sauce, all wrapped in pizza dough and baked until golden brown.
Preheat your smoker/pellet grill to 225F. Score the fat side of the pork shoulder. Slather mustard onto the pork shoulder to act as a binder, then liberally apply the Kinder’s Woodfire Garlic Seasoning.
Place the seasoned pork shoulder on the smoker for 8-10 hours, or until its internal temperature reaches 200F. Once cooked, remove the pork and allow it to rest for at least 30 minutes in a closed container.
Shred the cooked pork. To prepare the roll-ups, stretch out a floured 9-10oz pizza dough ball and cut it into 8 slices. Place shredded pork, mozzarella cheese, and Kinder’s Hickory and Brown Sugar Sauce onto each slice. Roll up each slice like a croissant.
Place the roll-ups in a pizza oven preheated to 800-900F for about 5 minutes, or in a conventional oven preheated to 500-550F for about 8-10 minutes, or until golden brown.
