BIRRIA GRILLED CHEESE 🔥 I love making this as Spring arrives, the aroma fills the air while I spend time with friends and family in the backyard. The anticipation is always a thrill.
Toast the dried chilies in a dry pan over medium heat for about 30 seconds per side. Throw in 1-2 cups of hot water for 10 minutes to soften.
Blend the softened chilies, about 1 tablespoon of Sweet Heat seasoning, garlic, onion, cumin, oregano, cinnamon, and 1 cup of beef broth until smooth.
Season the beef with Sweet Heat seasoning. In a large pot or Dutch oven, heat a little oil over medium-high heat and sear the beef on all sides until browned.
Pour the sauce over the beef and add the remaining 1 cup of beef broth and bay leaves.
Cover and simmer on low heat for 3 hours (or cook in a slow cooker on low for 6-8 hours or in an Instant Pot on high pressure for 45 minutes).
Shred the beef with forks once tender and build a sandwich with Colby Jack cheese, beef, consommé, cilantro, more cheese, and close it in. Toast the bread and serve with consommé.
