Beefy Mashed Potato Boats

-Preheat smoker to 350F (or oven to 400F)

-Cover potatoes in a little olive oil and salt and place in the smoker or oven for about 1 hour

-During that hour, caramelize onions, saute garlic, then remove and cook beef. Set both aside and cover with foil for later

-Once potatoes are fork tender, pull them off onto a cutting board, cut in half, and hollow out the center until edges are about ¼ inch thick

-Mash the filling with parmesan, milk, sour cream, and seasoning. Mix well then add the beef. Fry potato boats in 350F oil until crisp and fill with beefy potato mixture

-Top with cheese, onions, and back into the smoker/oven until cheese is melty. Garnish with parsley, bacon, and sour cream and enjoy!
